The Beginning

This will be a conversation about barbecue. Texas barbecue, to be precise.

My intent is to engage you with unique information gathered during my travels in search of great Texas smoked meats, and to relate interesting facts about the places we visit and the people we meet. Maybe I'll share a few stories about how they came to be where they are and do what they love to do. Let's explore how it fits in to the fabric of what makes barbecue so special in our state and why we should be so proud of the great work being done. There are many great barbecue conversations already in place, and I just want to contribute another thread to an already oh-so-colorful weave. My goal, my wish, is to inspire you to seek out and partake of the special treasure that exists all around us--wood-smoked Texas barbecue, and the people (and places!) who make it great.
